Purple olives: the best substitute to surprise in your dishes
Combining purple olives with other foods may seem mission impossible. Parmesan tulips stuffed with purple olives
INGREDIENTS TULIP WITH PURPLEY OLIVES (for 8 people)

- 300 g grated Parmesan
- Two yellow peppers
- 2 spring onions
- Two cloves of garlic
- 200 gr. of purple olives (already pitted)
- 2 tomatoes
- White wine vinegar
- Salt and pepper
- 4 tablespoons of olive oil
PREPARATION TULIPAS WITH PURPLE OLIVES
- First, melt 38 grams of grated cheese. Once it is melted, put the base of the frying pan in cold water and let it cool down. Cook the cheese plate on the other side. Once it is done insert it in a cup so that it takes the shape of a bowl.
- Cut the onions in slices. Do the same with the peppers and tomatoes, but this time in strips.
- Then, chop the two garlic cloves and mix them with the vinegar, salt and pepper. Add the previously cut vegetables.
- Finally, remove the tulips and fill them with the salad.
Butterfly and Mushroom Salad
INGREDIENTES DE ENSALADA CON ACEITUNAS MORADAS (para 8 pxa)
– 500 gr of butterflies
– 2 yellow peppers and 2 red peppers
– 4 celery stalks
– 250 gr of small mushrooms
– 300 gr of tuna in oil
– 1 teaspoon of mustard
– 100 ml of oil
– 3 cloves of garlic
– 4 boiled eggs
– 200 gr. of purple olives
– 2 tomatoes
– 1 teaspoon of mustard
– White wine vinegar
– Salt and pepper
– 100 ml of olive oil
– 2 tablespoons of chopped parsley

PREPARATION OF SALAD WITH PURPLE OLIVES
- To begin with, cook the pasta. While you cut the mushrooms and vegetables (the peppers in strips and the celery in slices)
- In addition, mix the vinegar with the mustard and add the salt, pepper and oil. Peel the garlic and, once cut the eggs in very small pieces, incorporate everything to the sauce.
- To continue, pits the olives and slices them.
- To finish, put all the ingredients together in a salad bowl. Let it rest for 30 minutes and ready to serve!
Chickpea mousse with cucumber and olives
INGREDIENTES MOUSSE ACEITUNAS MORADAS (para 8 pxa)
– 500 g of dried chickpeas
– 4 cloves of garlic
– 200 gr. of purple olives (already pitted)
– 2 bundles of parsley
– 150 gr of white sesame seeds
– Salt and pepper
– 1 tablespoon of sweet paprika powder
– 80 ml of olive oil
– Half a cucumber
– The juice of 1 lemon

PREPARATION OF MOUSSE OF PURPLE OLIVES
- First, soak the chickpeas the night before. The next day, cook them over a medium heat for approximately 1 hour. When this time passes, remove them and let them cool. Pour them into a colander and let them drain.
- To continue, peel and chop the garlic. Once you have done it, crush them together with some parsley leaves, the chickpeas, the lemon juice, the paprika, the sesame, the salt, the pepper and the oil.
- Finally, serve the puree and accompany it with some cucumber slices and the olives.
Mozzarella morsels with tomato, basil and purple olives
INGREDIENTS BITS WITH PURPLE OLIVES (for 20 pieces)

– 200 gr of cream cheese
– 1 tablespoon of lemon juice
– 2 tablespoons of chopped basil
– Salt and pepper
– 5 tomatoes
– 1 zucchini
– 375 gr of mozzarella cheese
– 1 baguette
– 4 tablespoons balsamic vinegar
– 4 tablespoons of olive oil
– 250 grams of purple olives
PREPARATION OF SNACKS WITH BLACK OLIVES
- First, mix the fresh cheese with the lemon juice, chopped basil and add salt and pepper.
- Then, preheat the oven to 200º. At the same time cut the tomatoes and the zucchini in slices. Drain the mozzarella and do the same.
- Cut the baguette slices and spread them with the cheese and basil cream. Assemble the slices of tomato, zucchini and cheese. Sprinkle it with a little oil and put it in the oven until the cheese is gratinated
- Finally, once it has cooled, and before serving, add the touch of black olives (previously pitted).
Smoked salmon canapés with cheese cream and purple olives
CANAPÉS INGREDIENTS WITH PURPLE OILS (for 20 pieces)
– 12 slices of wholemeal toast
– Half a lemon
– 150 gr of cream cheese
– Salt and pepper
– 12 slices of smoked salmon
– 4 sprigs of parsley
– 200 gr. of purple olives

PREPARATION OF CANAPÉS WITH PURPLE OLIVES
- Squeeze the lemon and mix a spoonful of the juice with the cream cheese. Season with salt and pepper.
- Spread the bread with the mixture and place the salmon.
- Chop the parsley and chop the olives
- Mix the rest of the lemon juice with the parsley and the olives. To finish, place a last teaspoon of the mixture on the salmon.
